Fermented using only wild yeasts, and slowly racked to avoid filtration. The wine is then aged for 12 months in new French barrels. With deep colour and a vivacious bouquet, the wine shows aromatic wild-flowers and blackberries. On the palate generous layers of mixed bramble, sweet herbs and dried rose petals. Lingering with savoury acidity. |
