Fried Rice in Hock Chew Style / 福州炒饭

INGREDIENTS

Potato Starch Powder 1 tbsp
Raisin 20g
Roast Duck 100g (diced)
Prawn 50g (cube)
Honey Pea 50g
Cooked Rice 400g
Egg 1
Gu Yue Long Shan Xiang Zao Lu 2 tbsp
Salt 1 tsp
Sugar 1 tsp

METHOD

1) Heat wok with 1tbsp oil, stir fry egg, add cooked rice and salt until fragrant. Set aside.
2) Heat wok and stir fry roast duck, prawn and honey pea till fragrant. Set aside.
3) Boil 300g water in wok, add all ingredients and seasoning. Thicken with potato starch and drizzle the gravy on the fried rice. Serve hot.

葡萄干 20克
烧鸭 100克(切粒)
明虾粒 50克
蜜豆粒 50克
白饭 400克

古越龙山香糟露 2 汤匙
1 茶匙
砂糖 1 茶匙

做法

1) 先把镬加热, 加入1汤匙的油, 加入鸡蛋, 白饭, 盐; 炒到饭香, 盛上碟.
2) 在热镬里头加1汤匙的油炒香烧鸭, 虾, 蜜豆粒, 捞起备用.
3) 水300克, 放镬里煮沸, 加进葡萄干, 烧鸭粒, 明虾粒, 蜜豆粒, 香糟露, 砂糖. 拌均匀. 用生粉水勾芡后, 淋在炒饭上即可.
